Spicy Scrambler Breakfast Sandwich

Ingredients

  • 1 Arnold 100% Whole Wheat Sandwich Thins roll, toasted
  • 1 tablespoon olive oil
  • 2 egg whites
  • 1 tablespoon red pepper
  • ¼ cup steamed broccoli florets
  • ½ avocado, mashed
  • 1 tablespoon parsley
  • Sriracha, to taste

Directions

  1. In a medium skillet over medium heat, warm olive oil.
  2. Scramble egg whites with red pepper and broccoli. Set aside.
  3. Spread mashed avocado on the bottom half of the Sandwich Thins roll.
  4. Layer on scrambled eggs and veggies, followed by a sprinkle of parsley.
  5. Finish with a drizzle of Sriracha and top with Sandwich Thins roll lid.
