Chickpea Waldorf Salad Sandwich

Ingredients

  • 4 slices of Arnold Oatnut bread
  • 15.5 oz. can chickpeas, drained and rinsed
  • 1/4 celery, chopped
  • 1/4 c. dried cranberries
  • 1/4 c. smoked almonds, chopped
  • 2 tbsp. eggless mayonnaise
  • 1 tsp. maple syrup
  • 1 tbsp. balsamic vinegar
  • 1 tsp. Dijon mustard
  • salt and pepper to taste

Directions

  1. In a medium bowl, slightly mash chickpeas with a potato masher or back of a spoon.
  2. Mix in the remaining ingredients.
  3. Divide the mixture between two slices of Oatnut bread.
  4. Cover with remaining two slices of bread and serve.
