Tropical Chicken Salad on Nutty Almond Bread

In a small bowl, whisk together olive oil, lime juice, Dijon mustard, garlic, salt, and pepper. In large bowl, combine chicken and fruits. Pour dressing over chicken mixture and toss to coat. To assemble stacks, place a lettuce leaf on four slices of bread. Top with 1/4 of chicken/fruit mixture. Place remaining slice of bread on top, and cut in half to serve.
