Mango Tango BLT Sandwich
In a small bowl, combine yogurt, salad dressing, and thyme; mix well. Refrigerate yogurt mixture until time to use. Place bacon on a microwave safe plate and cook according to package directions (approximately 2-4 minutes on high setting). Allow bacon to cool slightly before removing from plate. Spread 1 tbsp. of yogurt mixture on one slice of bread. Layer with 2 slices of lettuce leaves, 2 slices of bacon, and two slices of tomato. In a medium bowl, mix mango and cheese. Dollop ½ of the mango mixture over tomatoes. Place 2 more slices of lettuce leaves on top. Cover with another slice of bread. Repeat above steps for second sandwich.
