Beet and Feta Toast

Ingredients (1 serving)
2 slices Arnold® Country White bread
6 oz of beets; cooked
1 tbsp. extra virgin olive oil
1 tsp. fresh orange or lemon juice
2 tsp. vinegar
3 oz. feta; crumbled
orange zest; for garnish

Mix together olive oil, orange juice, and vinegar in a medium mixing bowl. Dice beets and fold into mixture. Smash all ingredients together using a fork or potato masher. Add in feta cheese and season with pepper, if desired. Place beet and cheese mixture on 4 slices of toasted bread and top with orange zest. Serve and enjoy!
